The slinzega in the tradition of the Alpine regions is a salami consumed during long hikes in the pastures and during hay at high altitude because the nutritional and energetic properties of the meat are very concentrated with respect to weight.
Today it is also known by connoisseurs as one of the finest salami that are obtained from beef: the ones we use are Grigio Alpina (Slow Food Presidium) and come only from the Trentino-Alto Adige Region. Its taste is very intense for the aromas that are concentrated during seasoning and should be served with a little seasoning cut very thin as an aperitif or for a nutritious and energetic snack. It goes well with structured beers or local white wines, such as Pinot Grigio or Gewürtztraminer.
