Monte Veronese PDO mark is a protected designation of origin. The cheese hails
from an area whose cheese making traditions date back to medieval times, though
it’s only been called “Monte” for about 200 years and it was used as bargain chip.
It is made in small wheels and has a buttery yellow textured and colour rind and
springy creamy texture scattered by tiny holes. Its flavour is fragrant and slightly
sweet with a subtle, mild taste.
